A few of you asked for the recipe when I shared a pic of them in Oti’s lunchbox on recently, and I’ve been making a batch every week since, so here it is… my gluten-free spinach wraps / crepes, whatever you want to call them.

Otis loves to eat these plain whilst they’re still warm for breakfast, but their creation came about when I needed some more lunchbox options (they’re an amalgamation of my gluten-free crepes and green pancakes). Like anything they lose a little of their flexibility after some time in the fridge, but they’re still perfect for filling with a smear of hummus and some grated carrot and tucking in to a lunchbox or taking to the park – the trick to maintaining their flexibility is keeping them nice and thin when you cook them.

They’re full of protein to keep tiny tummies feeling fuller for longer and savoury crepes or pancakes like this are a great way to introduce new flavours and colours to babies palettes, especially that wonderful green.
