We were blissfully fooled in to thinking it might be Summer today. It felt so good to have the warm breeze blowing through all the open windows, the hot sun on bare arms and legs as we rode our bikes alongside the lake. I had visions of the kids (and I) eating ice cream on the back steps in the afternoon, so I got a batch of these Mint Choc Chip Icy Poles in the freezer this morning – Otis calls the them “Icy Polys”, it’s so sweet.

Smoothies and icy poles are a great way to get some added nutrients in to kids. Including some fat, fibre and protein in them too will satisfy their hunger, provide a slow release of energy and fill their tummies.

Mint Choc Chip Icy Poles

2 ripe bananas
1 cup coconut cream
1/2 avocado
1 Tbsp hemp seeds
1 tsp spirulina powder
Small handful of fresh mint leaves *optional
1 Tbsp maple syrup
1 tsp vanilla extract
3 drops pure peppermint essential oil (I use doTERRA)
30g good-quality dark chocolate, chopped

Give everything – except the choc chips – a really good blitz in the blender, then add choc chips and mix through. Pour in to ice cream moulds and pop in to the freezer until set.
