FLUFFY PROTEIN-PACKED PANCAKES //

Protein provides the building blocks for every single cell in our body making it especially important for the rapidly growing little bodies of our kids. Eating adequate protein at breakfast helps kids maintain energy levels and focus, promotes satiety, as well as supporting muscle repair and growth, it will also reduce their need to continuously snack throughout the day!

We’ve been making these fluffy ricotta pancakes on the weekend, they’re packed with protein and an easy one for the kids to do with you - or for you to do one-handed while you wrangle a toddler.

I’ve used cassava flour for its gut health benefits as it contains resistant starch - a type of fiber that beneficial gut bacteria loves to feed on - helping to promote healthy bacterial growth and gut function.

These pancakes are great for baby led weaning too and yummy served cold and filled with chia jam.

Ingredients -
375g ricotta
4 pasture raised eggs
1 cup cassava flour
1/2 cup milk of choice
1/4 cup melted ghee
2 tsp vanilla extract
1 tsp apple cider vinegar
1/2 tsp baking powder
1/4 tsp baking soda
Zest of 1/2 a lemon
Blueberry maple syrup:
1 cup frozen blueberries
Juice of 1 orange
1 Tbsp pure maple syrup

To make the blueberry maple syrup – place all ingredients in a small saucepan over a low heat, bring to boil and cook for 5 minutes.
To make the pancakes - whizz everything together in a blender. Scoop out tablespoons of the mixture into a pan (drizzled with a little olive oil) over medium heat and cook until bubbles start to appear, then flip over and cook for another couple of minutes. Serve with blueberry maple syrup.
Makes approx. 20 mini pancakes

BABY’S FIRST MUFFINS //

Banana Buckwheat Muffins or BB Muffins that we’ve been enjoying on our Summer picnics. Barely sweet and easy for chubby little fingers to grasp, they make the perfect first muffin for baby.

2 ripe bananas
2 free range eggs
1 cup buckwheat flour
2 Medjool dates
2 Tbsp hemp seeds
2 Tbsp extra virgin olive oil
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda

- Whizz together the banana, eggs, olive oil, dates and vanilla.
- Mix together buckwheat flour, cinnamon, hemp seeds, baking powder & baking soda in a bowl.
- Add the wet ingredients to the dry and stir to combine.
- Pour in to silicone muffin moulds and bake for 20mins.
- Store in the freezer.

Start as you I tend to go on, they say.

A warm and rainy New Year’s Day spent adventuring with my loves, in our own backyard… dipping in and out of fresh mountain rock pools, brimming from all the recent rains.

Quickly whipped up a batch of @wellfedkitchen_snacks Chickpea Choc Chip Cookies before we left and they were still a little warm as we ate them in the car on the way home and we promised to do more, of just this.

LEMON, HONEY & THYME GUT LOVING JELLY GUMMIES //

Lemon, honey and thyme have long been used to remedy colds and sore throats thanks to their potent antibacterial, antiviral and antioxidant properties that help to fight infection and break up mucus. We’ve combined them all in a delicious gut-loving jelly gummy to help combat any lingering Winter sniffles that the kids will love, and love making too!

Here’s what you’ll need…
- 4 lemons, quartered
- 4 Tbsp raw honey
- 4 sprigs fresh thyme
- 2 Tbsp @wellfedkitchen_snacks Gut Loving Jelly Gummies gelatin

Instructions:
1. In a large jar place the lemons and thyme, then drizzle over with the honey. Cover and leave for a few hours (or overnight) - the honey will macerate the lemons and draw out the liquid
2. After a few hours, mash with a wooden spoon and then strain out the juice. Squeeze the lemon pieces as you are straining to get all the juice out. You should get 1 cup of juice. If not, top up with a little water or extra lemon juice
3. Pour juice in to a small saucepan. Sprinkle over gelatin, 1 Tbsp at a time, allowing it to bloom and turn in to a jelly blob
4. Heat over low, stirring occasionally, until the gelatin has completely dissolved
5. Pour in to @wellfedkitchen_snacks koala bear moulds or a baking tray and place in the fridge to set for 2-hours
6. Remove from moulds and store in the fridge for up to 5-days

CRUNCHY DATE BARK //

Apparently all the cool kids on TikTok were making this, and whilst I’m not one for viral recipes - ok, the baked feta pasta I did make - Crunchy Date Bark looked too good to pass up. These are instructions for assembly rather than a recipe… no quantities, just follow your heart and layer up:

- Medjool dates, pitted
- Nut butter
- Toasted nuts
- Melted dark chocolate
- Sea salt, just a sprinkle
I added in cinnamon for some blood sugar regulation and sesame seeds for extra calcium

Chill in the fridge for 20 mins or until set.

IRON-RICH BLISS BALLS //

Iron is so important for kids. For their energy production, immune function and brain development - it’s critical for this in babies in fact. Yet, iron deficiency is one of the most common nutritional deficiencies in children which can cause everything from fatigue, loss of appetite, delayed growth & development, sleep disturbances, frequent infections and behavioural problems. Iron aids the transport of oxygen through the blood and children are at higher risk of iron deficiency than adults, because they need more iron during growth spurts.

Liver is my number-one food when it comes to boosting iron. Gram for gram, it’s more nutritious than any other food. I’ve added a little liver powder to these bliss balls and the kids will be none the wiser that it’s even in there.

I make all my bliss balls with prunes too, a good source of plant-based iron and vitamin C to enhance iron absorption.

Makes: 14

150g sunflower seeds
250g pitted preservative-free prunes
2 Tbsp hemp seeds
2 Tbsp cacao powder
2 Tbsp melted coconut oil
1 tsp organic grass-fed beef liver powder*
½ tsp cinnamon
½ cup unsweetened desiccated coconut, for rolling

Add sunflower seeds to a food processor and pulse until coarsely ground. Add all remaining ingredients and pulse until mixture forms ball and hold together.

Roll mixture into 1 Tbsp balls and roll balls in coconut to coat.

Place in the fridge for 1 hour to set.

*I use @gelproaustralia organic grass-Fed (and grass-finished) Australian beef liver powder.

Ok, so I’m a bit late to the Easter party this year… but Oti and I just made these cr*p free kid-friendly Easter chocolates - #dairyfree, caffeine free, no added sugar and no added flavours or emulsifiers - made using @wellfedkitchen_snacks Carob Koala Bear mix and cute Easter egg moulds from @bigwaustralia. We added our own flavours with @eatmyberries freeze dried strawberries, @noya.nutbutter almond butter too… I’ll share the how-to in stories.

A oldie but a goodie and a recipe that I keep coming back to… my Buckwheat Banana Bread. Quick to make and versatile too - working as both a bread or as muffins - and the flavour variations are endless: add in berries, choc chips, nuts/seeds or just enjoying it as is. Plus it freezes well making it a great one to pop in school lunchboxes.

We topped it with cultured butter and berry chia jam today and it was extra👌🏼.

Ingredients:
1 cup buckwheat flour
2 large or 3 small over-ripe bananas, mashed
2 free-range eggs
2 Tbsp pure maple syrup
2 Tbsp olive oil
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/4 tsp baking powder
1/2 tsp baking soda
Pinch of sea salt

Instructions:
1. Preheat oven to 180’C
2. Line a loaf tin with baking paper
2. To a large bowl, sift flour, baking soda, salt and cinnamon. Stir together, then set aside
3. To a medium bowl, add mashed bananas, maple syrup, melted coconut oil, vanilla extract and eggs. Whisk together until smooth
4. Pour wet mixture over dry ingredients and mix to combine
5. Pour mixture in to loaf tin and bake for 50-60 minutes or until lightly browned and a toothpick comes out clean
7. Allow to cool before removing from the tin – resist slicing it until it’s come to room temperature, otherwise it will crumble
